Most Important book

If I had to choose one book that says more about masonry ovens and naturally leavened breads and says it in a clear style, then The Bread Builders by Daniel Wing and Alan Scott would be my choice. I haven't seen any other book that even comes close. You can buy it here:
The book is not expensive, and if you don't already have it, then I think you should invest in a copy.

Thank you for the photo and the description of the Georgian Tone Oven.
To me, it looks like a tandoor style oven which is really common in many parts of the world.
