Yes, another experiment. Oven preheated at 475 for 30 minutes. Bread baked undercover at 475 for 15 minutes, and then baked undercover for 30 minutes at 375. Although comparing photos is a little difficult, but this loaf is quite a bit paler than the loaf baked the previous day. The crust is still a little too crusty for me, and the interior is slightly dumpy.

This bread was baked undercover for the whole bake. 15 minutes at 475.
30 minutes at 400. The bread looks and tastes good. Maybe there's no need to remove the cover until the loaf is done baking.
