Yes, another experiment. Oven preheated at 475 for 30 minutes. Bread baked undercover at 475 for 15 minutes, and then baked undercover for 30 minutes at 375. Although comparing photos is a little difficult, but this loaf is quite a bit paler than the loaf baked the previous day. The crust is still a little too crusty for me, and the interior is slightly dumpy.
