If you haven't read 52 Loaves by William Alexander, then you're missing a real treat. It is the story of a man's obsessive compulsion to bake the "perfect" loaf of bread. But of course, if you read this blog, then probably you too are somewhat compulsion about your bread baking activities. I sure am.
I felt the author was totally dismissive of the no-knead technique, and not really fair to Kiko Denzer, but his style is so filled with humor that one can't get too unhinged about this.
Soon, I hope he tosses out his pizza stone, dispenses with the boiling water technique and starts to make "real bread" in an outdoor wood-fired oven. And I suspect he will.
