Flat Breads Without Oven

No, you don't even need an oven to make flat breads. In fact, flat breads were made long before bread ovens evolved. In the set up shown, flat breads were rolled out and then cooked on an old iron plate over an open fire.

They are delicious, and nothing could be easier to make. Dip them in extra virgin olive olive, and you have a meal.

Would love your recipe as my attempts have been less than stellar. Love the setup, btw.

You can find the recipe here and lots of material about earth oven construction:

The book is available in print and in download format. However, if you search my blog I'm sure you'll find what you need for free.

prior to iron plates, native americans would cook their flat breads directly on a flat thin piece of sandstone.

I believe the Hopi Indians made or I hope, still make their piki breads on a flat stone.
